Coconut oil
¼ cup of water
1 Packet of Soba Noodles
1 Small Red Onion
½ Chinese Cabbage
½ Broccoli
1 Carrot
1 Capsicum
3 cloves of garlic
Tofu of your choice
2 tbsp Miso Sauce
Soy Sauce
½ Lime
1 small red chilli
Sesame seeds 

How To
Slice and dice up all the vegetables and tofu into bite sized chunks. Heat a large Sauté pan over medium heat and add a good lug of coconut oil. Fry the tofu until golden and crisp, then scoop it out of the pan with a slotted spoon and set aside on a plate. Now add the garlic, onion and ginger in pan and stir-fry until the garlic turns golden. Add your vegetables and stir-fry for a further 4 minutes. Squeeze in the juice from half the lime and add a splash of soy sauce. Then Stir in 2 tbsp of miso sauce with ¼ cup of water. Cook the soba for 2 mins until just right, then transfer to sieve and soak in ice cold water to retain slightly firm texture. Drain water and Serve soba next to Vegetables topped with sesame seeds, and Soy sauce with chilli flakes (if desired) on the side.
