Beetroot Hummus is a great way to brighten up the table when entertaining. It gives an interesting twist to the average hummus dip and goes so well with celery sticks and fresh bread. Give it a try it!

What you’ll need:

3 cups chickpeas

250g beetroot, steam cooked

1 clove garlic

2 tbsp tahini

½ tsp salt (to taste)

1 juiced lemon

olive oil to garnish

Add all of the ingredients to a blender or food processor and blend until smooth. Serve with a drizzle of olive oil & garnish with parsley. It’s that simple and delicious!
