1 cup soy milk
1 tsp apple cider vinegar
2 cup flour
2 ½ tsp baking powder
¼ tsp baking soda
½ tsp salt
½ cup & 2 tbsp sugar
¼ cup & 2 tbsp canola oil
1 tsp vanilla extract
zest of lemon
2 cups blueberries

How To
Heat oven to 190, line muffin tin with cups. Combine soy milk & apple cider vinegar, set aside and allow to curdle. In a separate bowl combine flour, baking powder, soda & salt. In another bowl mix sugar, oil, lemon, vanilla, add in the milk & vinegar mixture. Then stir in the dry ingredients, and fold in the blueberries. Pop into the muffin tins. Bake for 20-25 minutes.
