A recipe to warm your body, as summer comes to an end and autumn approaches! 

1 tbsp olive oil
1 tbsp rosemary
½ onion, diced
½ pumpkin, cubed
4 cloves garlic
5 cups veggie broth
1 cup coconut milk

How to:
First heat oil in a pot add the onion and cook until browned. Then add pumpkin & garlic and cook for a few more minutes. Add rosemary & veggie broth. Bring it to a boil, then let it simmer until pumpkin is soft. Puree the soup in a blender and then return to pot and add coconut milk & salt to taste.
