Buddha Bowl

A Buddha Bowl is mix of vegetables, protein and carbohydrates that is flavoured in a simple and nutritious way, helping you eat clean and healthy food quickly and easily. One of my favourite combinations for a Buddha Bowl is noodles, tofu, mushroom & broccolini with a teriyaki & sesame seed dressing.

Instructions:

Firstly, pop the soba noodles on to cook while you prepare the glaze for the tofu and veg.

Glaze recipe: 1 tbs of sesame oil, 1 tbs of rice wine vinegar, 1 teaspoon of maple syrup, 2 tbs Tamari sauce, 1 clove of crushed garlic, and a 1tbs of grated ginger. Combine all ingredients together and mix.

Cook the tofu & mushrooms in a fry pan with a little oil. Once they’re nice and brown, add the glaze and the broccolini to the mix and pop the lid on to let them steam up a bit while we finish up the noodles. Don’t let the broccolini go brown, it should go a nice bright green, then it’s ready. Approximately 8 minutes should do it.

Make the sauce for the noodles with 1tbs tamari sauce, 1tbs sesame oil, 1 teaspoon maple syrup, a sprinkle of chilli flakes, a squeeze of lemon, 1 spring onion chopped, and a tbs of grated ginger.

Once everything is done mix together the noodles and sauce. You can eat the noodles, tofu and veg separately or mix them all up together into one delicious meal. Add a side of salad greens if you have them as well. Voila! A wonderfully health Buddha Bowl.
